At Monaci delle Terre Nere, sustainability isn’t a choice — it’s the way we live, breathe, and welcome. We are an Eco-Bio Resort on Mount Etna, in Sicily, certified for our environmental and social commitment — and we have been from the very beginning. When you pass through the gates of the estate, you enter a world where every gesture matters and every detail tells a story of deep respect.

The farmhouses that host you have been brought back to life with artisan care. Lava stone, Etna chestnut wood, natural paints, and artful furnishings reflect the true soul of Sicily with a contemporary spirit. Every room, suite, or villa is conceived as an elegant retreat, built according to the principles of bio-architecture and in harmony with the landscape.

We are guardians of more than 150 native fruit tree varieties, of ancient seeds rescued from extinction, of a precious ecosystem in perfect balance. The orchard, the garden, the henhouse with free-roaming chickens — every corner of the estate is a celebration of Etna’s biodiversity. No pesticides, no chemical fertilizers: here, nature works with us, not against us.

Seventy percent of what you taste is grown in our gardens, nurtured by the hands of our chefs. The rest comes from small local producers chosen with great care. Our resort with restaurant in Zafferana Etnea embraces slow food — cuisine made of real flavors, living ingredients, and biodiversity worth protecting. Here, even a single tomato tells a thousand-year-old story.

Heating? Solar. Irrigation? Gravity-fed, no pumps. Cut grass? Turned into mulch to nourish and protect the soil. Even our pool water is heated using solar panels. Every decision is part of a powerful, delicate balance — between innovation, nature, and beauty.

We cultivate ancient, pre-phylloxera vines — rare, historic varieties that now grow only here. We produce six organic labels, including Le Viti di Minico, born from a legendary story our sommelier loves to share during wine tastings. Because here, wine is culture, memory, and vision.
